Earthen Pots Takes Away Moisture So Phirni Becomes Thick. Kheer Can Be Served Both Hot And Cold. Rice Washed, Soaked For 5 Minute And Water Drained. Dry For Few Minutes Now Coarsely Grind.Don't make It In A Powdered Form Otherwise We Could Have Taken Rice Flour.





So Be Cooking Grounded Rice With Milk. Almond, Pistachio, Sugar 3/4 Cup, Kewra Essence 1-2 Drops Coarsely Grind Rice. It Can Be Done In Mortar Pestle Also Don'T Let Rice Dry Too Much Otherwise You Want Be Able To Grind Don'T Do It In A Grinder .When Milk Is Boiling See The Texture Of Rice Put In Milk And Stir Otherwise It Will Form Lumps. Keep Flame Low . Soon It Will Reduce. Keep Doing Other Work In Kitchen And Keep Stirring In Between Keep A Watch On Milk. It Should Not Stick To The Bottom By The Time Milk Is Being Reduced, You Will Chop Nuts.After 15 Minutes , Level Of Milk Has Reduced.Soaked Saffron In Hot Milk.


You Will Add In Boiling Milk Saffron Increases Taste, Color And Adds Aroma Keep Stirring In Between Don'T Grind Rice In Grinder Jar Because We Do All Kind Of Stuff In Jar.So It Might Curdle The Milk Cook Phirni In Heavy Bottom Pan All Utensils Used In Making Phirni Should Be Free Of All Masalas Otherwise Phirni Might Curdle After 45 Minute It Has Reduced A Lot, But Needs More Time To Be Reduced It'S Easy To Make Phirni. No Need To Stand Continuously Keep Doing Other Stuff In Kitchen. See The Consistency.




Need More Time--15-20 Minutes You Can See The Color Also. Now The Required Consistency Has Reached. Add Sugar According To Your Taste. 5 Minutes More And Its Done Add Nuts And Leave Some For Garnishing Nuts Are Optional Lastly Adding Kewra Essence 2-3 Drops.If You Are Using Kewra Water Then Add 1 Tsp Let It Cool Down For 10-15 Minute. Now Pour Phirni In Earthen Bowls. When It Will Cool Down Completely It Will Get More Thick Sprinkle Nuts Put Silver Wirk(Optional) Paste The Wirk Without Touching Wirk Otherwise It Will Stick To Your Finger Paste While Holding The Paper As You Can See Phirni Is Ready Prepare On Eid Special Occasions!!!
