Lauki kofta curry!!!!


Today we will make Lauki kofta curry.

It is mouth drooling, and will be relished by all. Let's start making it.
 Here is 1 cup grated bottle gourd, Keep in a bowl and press out the juice like this. To grate the bottle gourd, peel and wash it then grate it. Take 1 cup chickpea flour, add 1/2 cup first. add 1 green chili and 1/2 tsp ginger paste. Add 1/4 tsp turmeric powder. Add 1/2 tsp coriander powder, 1/4 tsp red chili powder less than 1/2 tsp salt, less than 1/4 tsp carom seeds, crush and add it, it gives a nice taste. Add some green coriander, mix all ingredients well. Dough for kofta is ready, 3/4 cup chickpea flour is used for batter. Keep aside batter to puff up.


Heat oil for frying the koftas. 10 minutes have passed the batter is ready. Oil is rightly hot , put koftas to fry. Oil should be medium hot, flame should be medium high. Koftas are brown from beneath. Flip and fry well until golden brown from all sides. Koftas are golden brown, take them out. Hold the ladle on the edge of the wok. So that extra oil drains back to the wok. Fry all the koftas likewise. Koftas are fried and ready. 9 koftas are ready from this quantity of batter.

To make gravy pour 2 tbsp oil in wok to heat. Add 1/4 tsp cumin seeds in the wok. Reduce flame to prevent spices from browning. Add 1/2 pinch asaforetida, 1/2 tsp ginger paste. Add 1 tsp coriander powder, 1/4 tsp turmeric powder, Slightly roast these. Here we have 3 tomatoes 1 green chili. Grind and make its paste. Take tomato green chili paste. Add it. Increrase flame. Add 1/2 tsp red chili powder. Adjust the quantity of red chili as desired.

Still masalas and roast until, oil separated from it. Oil is separating, masala is roasted. Add 1 tsp dry fenugreek leaves. Crush and add. Add 1 tbsp chickpea flour, stir and roast masala for another 2 minutes. We are making gravy from tomato and chickpea flour, it is really delicious, you can make gravy as desired.  We roasted the masala for another 2 to 3 minutes. Oil is separating. Masala is roasted and fragrant as well.




Add 2 cups water to it. Mix well. We are making gravy thin as koftas absorb it. This makes the sabzi dense. Add 1 tsp salt. Add it at the end as by then you will have idea of the quantity of sabzi. Add 1/4 tsp garam masala, green coriander, Mix then add lauki juice and mix again. Oil is floating and gravy looks nice in color this happens when masala are roasted well till oil separates.

Cover and cook it for 3 to 4 minutes. 4 minutes have passed , gravy is ready. Put koftas in the gravy. Cover and cook again for 3 to 4 minutes. After 4 minuites sabzi is cooked, take it out in a bowl. Garnish with  green coriander, Lauki kofta is ready to be served,  when you fry koftas check oil, oil should not be too hot. Keep oil medium high hot. You will make Yummy Koftas.
