Chicken Biryani

Today's Recipe is Chicken Biryani


Ingredients required are Ginger, garlic paste,Black pepper seeds, Clove Green and Black Cardomom, Nutmeg, Mace Spice Bay leaf, Onions, Chicken, Rice Cooking Oil ,Food Color, Food Essence, Salt Red Chilli Powder, Garam Masala Powder and Corriander Powder .

Let's started with the preparation of chicken biryani


I'm using half kg of Basmati Rice .
Need to cleaned with water to remove starch and let it be soaked in water for 15 mins.In meantime lets prepare other things I have taken 2 liters of water for our half kg of rice I'll add beaten green cardamom in it.

One Bay Leaf 1 tbs of cooking oil 1 TBS Salt I'm not adding a lot of salt, will add it later in the rice Need to cover it up and put it on medium flame so that the water boils properly Its time to grind all the dry spices that I mentioned in the beginning I've grinned all the dry spice As soon as I opened the lid I could smell all the flavors Don't grind the dry spice too minced keep it coarse I'm using 400 grams of Onions Will add some Ginger and garlic Then grind them together till mince Onions and ginger garlic paste is ready I've put the cooker on the stove to prepare the chicken.



 Lets add some cooking oil The oil needs to be heated for the next step Oil is now heated I'll add one bay leaf to it and then add Onion, ginger and garlic paste to it Till the time our onions and other ingredients is being saute I'll then cover it up with the lid for sometime And lets check If the water for the rice has boiled yet or not Yes the water is boiled Remember the dry spices we grinned earlier Need to add a pinch of it in boling water This gives more flavor to rice It time to add rice that I'd soaked in water .

You always need to boil the water first and only then add rice otherwise the rice gets stuck together when prepare in cold water Also you don't need to boil the rice for a very long time Soon after putting the rice when the water starts to boil again I'll will switch off the stove Will let the rice remain in hot water after that so it cooks itself.

Now lets wait till the water starts to boil again Keep in mind to roast the onions every now and then or else they might burn or might get stuck in the bottom Keep rotating them every few minutes As you can see the water is now boiling We don't want to cook the rice completely they are half cooked at the moment, so we will switch of the stove and let the rice stay in hot water for next 5 to 7 minutes so they cook properly from inside Later we will strain the water from rice Its time to add food color and food essence to the rice.

We need take 1 TBS of milk Or water instead Need to add very little of essence like this to the milk I added very little essence and I can smell it from here Lastly a little bit of food color Make sure you add this evenly So its half colored rice and half white Then slowly mix it together with a spoon The onion paste is now reddish brown and ready for next step Its time to add chicken to it For this recipe I tool Half Kg of rice plus half kg chicken (You can also use more) Will keep rotating and roasting the chicken till it turns reddish brown I've been roasting the chicken since 15 mins now Need to keep rotating it like this or else everything gets stuck in the bottom Its half cooked now so its time to the spices Red Chilli Salt to taste Coriander Powder Garam Masala Powder Will also later add the spices that we grinned earlier Need to roast and rotate till it turns red Later we will add very little water to this because we don't want a lot of gravy Its time to add the grinned spices.




 These spices will enhance the flavor and taste of this recipe Add the grinned spices in the end after roasting the chicken otherwise it will lose its flavor and smell while roasting After adding the spices don't roast a lot just a little bit to mix everything Its time to add a little water to further cook the chicken half cup of water should do Will now close the lid of pressure cooker it will take 1-2 whistle for chicken to be cooked completely After the 1st whistle you can lower the flame and let the chicken cook for 5 min After 5 minutes you can turn off the stove and open the cooker to check the chicken As you can see the chicken it now cooked This is now ready to be mixed with rice Need a big deep pot to make layers of chicken and rice Begin by adding the chicken layer at the bottom Now I'll add one layer of rice to it I've also added a little bit of salt in the rice earlier .

You can also add salt according to your taste If you like chicken a lot then you can use more as compared to rice Due to a lot spices the Biryani smells very delicious End by adding some oil Now you can cover it with a strong lid so that there is no air passing by Then on lower flame let it cook for at least for 15 minutes Its been cooking for 15 to 20 minutes now need to keep it on low fame till rice is cooked properly Chicken Biryani is now ready Let's serve You can serve it with Raita (Yogurt with Veggies).
